Apple Pie Kefir Ice Cream

Tangy Kefir forms the base of this sweet, tangy apple ice cream. Try making this simple homemade ice cream using Kefir.

  • 4 cups vanilla low-fat organic kefir
  • 1 frozen pie crust
  • 4 gala apples
  • 2 cups low-fat organic milk
  • 1/4 cup Brown Sugar
  • 3/4 cup granulated organic sugar
  • 1 tsp nutmeg
  • 1 tbsp butter
  • 1 tbsp pure vanilla extract
  • 1 tsp cinnamon

How to Make

  1. Keep in the freezer the ice cream maker’s mixing bowl until before you use it.
  2. Peel the apples, core and dice. Melt in a saucepan some butter and add the apples, 1 tsp cinnamon, brown sugar, 1 cup of water and 1 tsp nutmeg. Then simmer, stirring occasionally until the apples are soft. Allow to cool to a room temperature.
  3. Preheat the oven to 400 degrees. Place on a cookie sheet the pie crust and bake until golden brown. Remove and allow cool to room temperature.
  4. Strain and place in a large bowl the apple mixture. Add the kefir, milk, 1 tablespoon of vanilla extract and granulated sugar. Taste to see if you need to add more cinnamon or nutmeg then mix together.
  5. Remove from the freezer the ice cream maker’s mixing bowl and put it in the ice cream machine. Put in the bowl the ice cream mixture. Run for about 30 minutes until the mixture thickens.
  6. Break up and scatter the pie crust at the bottom of a plastic storage container. Scoop the ice cream and put on top of the crust. Smooth the top and put the covered container into the freezer.
